1 15 oz. can beets (not pickled)
¾ t. salt
| | Directions: | Peel, dice, and boil potatoes untilsoft - about 20 minutes. Whilepotatoes are cooking, open the canned beets, drain off and reservethe liquid. Puree the beets plus1 tablespoon of the liquid in theblender. When the potatoes are soft, mash/whipthem with a hand mixer. Add the pureedbeets and salt; whip them together.
