Cook liguine according to package directions. Meanwhile, in a large skillet over medium heat saute the garlic in either the water, broth or oil for 15 seconds. Then add the onion and zucchini and stir-fry for 2-3 minutes or until tender. Add the tomatoes, parsley and seasonings. Heat 1-2 minutes longer. Remove from heat and stir in linguine. Top with vegan Parmesan and serve immediately. Note: By using the water instead of the oil it slashes off 120 calories and makes the dish much healthier. If you want to stick to whole grains, use millet instead of the pasta. |
