| Curried Eggplant with Peas - Recipe #68 |

| Author: | www.fatfreevegan.com with modifications by April Ashcroft | | Ingredients: | Cut 3 medium eggplant into 1 inch cutes. (I only had two but it worked fine)
Spread on a non-stick baking sheet and roast in oven on 475 for 30 minutes. (I "baked" them at 350 for about that same time)
Stir them once during baking time.
In a medium pot warm 1 10 oz package of frozen peas.
When eggplant is tender, add to warmed peas.
Whisk together 2 Tbsp lime juice with 1 tsp curry powder and ground pepper. Pour over eggplant and peas and mix well.
Add 1/2 cup chopped cashews (I used pine nuts. They are higher in nutrients and have 30% protein. The highest of all nuts and seeds).
Add 1/2 cup chopped cilantro.
