Chickpea Veggie Salad - Recipe #60
Author:Dr. Fuhrman 
Ingredients:2 cups fresh corn (or frozen that has been thawed)
2 cups broccoli florets
2 medium carrots
1 med zucchini
1 med yellow squash
1 cup frozen peas thawed
1 med red onion chopped
2 cloves garlic pressed
1 15 oz can garbanzo beans
1/2 avocado chopped
rice vinegar
 
Directions:
Chop vegetables by hand or in a food processor with S blade.
Be careful not to chop too fine.  Mix vegetables in a bowl with
garbanzo beans and rice.  Add dressing and fold in avocado
carefully.
