Chic Pea Veggie Salad - Recipe #122

Ingredients:
1 cup cooked brown rice
1 - 2 cups fresh or frozen corn
2 cups chopped broccoli
2 medium carrots
1 medium zucchini squash
1 medium yellow summer squash
1/2 cup chopped red onion or scallions
1 clove garlic
1 can garbanzo beans (Chic Peas)
Salad dressing of choice.
Directions:
Mix all ingredients in a large bowl and serve.
I like to make this salad when I don't have any leafy greens and I need to clean out my fridge. You can use any assortment of veggies that you have on hand.
